How To Slice, Mash and Freeze Your Avocados?

Most people like avocados and they can be used for breakfast, lunch and dinner. We always enjoy them. However, they don't keep long on the shelf and they don't last long when they are cut. Unfortunately the oils in them turn brown due to fatty acid oxidation. Poor things die quickly. And, gee they are expensive. Some suggest to place a cut avocado in a container that has a small amount of water in the bottom but that only lasts a day or two. Want to have avocados stay fresh indefinitely? There is a way. Simply freeze them! What an idea. So, how does it work? There are actually two ways to go about this. One way is by halving the avocado and the other is to puree it. Either way you go (cut in half or puree) the procedure starts out the same. A frozen avocado can last for up to six months. . Avocado preparation for freezing:
Make sure to wash the avocado well.
Cut it in half and then remove the pit and peel it
If you want to cut it in half and freeze it that way, wrap each half in plastic wrap or tin foil. Then put each half in a resealable plastic bag. Then put in the freezer. Make sure to label your bag with the date you froze it.
If you want to puree the fruit, use a fork to mash it or use a processor if you have one (I really think the fork is easiest). You'll want to add a little lemon/lime juice while you are mashing it. Place the mashed fruit in a resealable bag or plastic container and put in the freezer. Make sure to label it with the date you froze it.

Thawing:
Take mashed avocado out of the freezer and put in the refrigerator
Thawing can take 12-24 hours
If you thaw it at room temperature (leave out on the counter) it takes about an hour.
Now, you won't be able to serve slices of avocado as you would do with a fresh one, however you can use the frozen mash for guacamole, spreads and dressing. The idea is that you can buy avocados when they are lower in price or out of season and stock up and have them anytime you want.
